My Danish Grandmother’s Sugar Cookie Recipe

This past summer, my son and I went on a whirlwind European adventure. I let him choose our destinations and one of the places he chose to visit was Copenhagen, Denmark. This made my mother so happy because she is half Danish and yes, I will share my Danish grandmother’s sugar cookie recipe with you!

God is in the details

The people in Denmark were as beautiful as the countryside.

Here is one example: I was very sick with the worst bladder infection (hi, flying with a bladder infection is not fun).

The hotel phoned a doctor for me, and he wrote me a prescription (instead of making me sit in a waiting room for hours). Thank you, Nobis Hotel.

We walked to the pharmacy and I was so dehydrated I could barely speak. I couldn’t wait to find a market to buy some water and was planning on going there the second I had the prescription.

So I’m being waited on by the person behind the pharmacy counter and I’m thinking to myself (in my head) about how thirsty I am.

I am so thirsty.

The salesperson stops what she’s doing, looks at me and says, “Can I get you a glass of water?”

I am not even kidding.

That is GOD.

Spending time outside is important for your well-being.

Similar to Minneapolis in the summertime, everyone was outside enjoying the warm weather—that’s one of the first things we noticed; sitting on doorsteps, outdoor cafes or in any of the nearby parks.

Hygge + Hospitality

After visiting Denmark, I now completely understand the interest surrounding hygge and I’m trying to recreate it in my home.

Hygge reminds me of hospitality and having the intention to create an environment that is welcoming and not fussy. Cozy. 

Throwing off any strongholds of pretentiousness both hygge and biblical hospitality can’t be bothered by trying to impress others.

This is something I’m working on. How about you?

My mom is an incredible baker and honestly, I am not. I’m better at cooking where there is more forgiveness and measurements don’t have to be precise. Having said that, even I can make these cookies.

Hospitality tip: these are wonderful to give as gifts in a tin. I just wrap them in wax paper.

My Danish grandmother’s Sugar Cookie RECIPE

These are not Danish Butter Cookies. They are traditional sugar cookies that you can bake year-round.  A simple, no-fail recipe without fuss. These are perfect for any gathering, most especially Christmas.

Firstly, gather your ingredients.

  • 1 c. butter
  • 2 eggs
  • 1 1/2 c. sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1 tsp. salt
  • 3 c. sifted flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder

Secondly,  mix butter, eggs, sugar & extracts.

Add dry sifted ingredients–chill.

Roll thin & cut with a cookie cutter.

Bake 375 degrees 6-10 minutes (watch them).
